Pesto Stuffed Spaghetti Squash Rings

Ingredients

  • 1 spaghetti squash

  • 1-2 tablespoons olive oil

  • 1/2 teaspoon garlic powder

  • 3 tablespoons fresh basil, shredded

  • 1/2 cup ricotta cheese

  • 1/2 cup mozzarella cheese, shredded

  • 1/4 cup freshly grated parmesan cheese

  • 2/3 cup pesto

Steps

  1. Preheat oven to 450.

  2. Microwave spaghetti squash for 1-2 minutes.

  3. Cut spaghetti squash into 4-6 rounds (~1 inch) and remove seeds.

  4. Brush with olive oil, salt, and pepper.

  5. Roast for 20 minutes, flipping after 10 minutes.

  6. Mix together ricotta cheese, mozzarella cheese, parmesan cheese, basil, and garlic powder.

  7. Use a fork to shred the strings in the squash to form “nests”.

  8. Add pesto into each squash piece and add cheese mixture on top.

  9. Broil in oven for a few minutes until the cheese is bubbly.
