1 lb ground turkey
1 small sweet onion - diced
1 green bell pepper - diced
(optional) 1 can black beans, drained and rinsed
8-10 flour tortillas
1 can Old El Paso mild red enchilada sauce
1 lb shredded cheese
Preheat oven to 350.
Brown turkey in a large skillet.
Add diced onion and green pepper, cook until onion is translucent.
(Optional) Add black beans.
Fill tortilla, roll, and place in large baking dish. Repeat until all meat is used.
Cover filled tortillas in enchilada sauce.
Coat with shredded cheese.
Bake for 30 minutes.
Serve with desired toppings.
Feel free to experiment with the inside ingredients, beef works as well. The more you add, the further it will go, so prepare the number of tortillas accordingly. Corn tortillas may be used in place of flour, but they will be much more difficult to roll.
