Italian Flag Cod

Details

  • Cook time: 30-40 minutes

Ingredients

  • 1 lb cod

  • 3 medium tomatoes

  • 1 sweet onion

  • Parsley

  • Salt and pepper, to taste

  • Olive oil

Steps

  1. Preheat oven to 425.

  2. Place cod in baking dish.

  3. Chop tomatoes into 1/2 inch pieces.

  4. Chop onions into 1/4 inch pieces.

  5. Combine tomatoes and onions, cover cod.

  6. Sprinkle with parsley, salt, and pepper.

  7. Drizzle with olive oil.

  8. Place in oven, bake for 20-25 minutes (or until cod becomes flakey).
