1 lb cod
3 medium tomatoes
1 sweet onion
Parsley
Salt and pepper, to taste
Olive oil
Preheat oven to 425.
Place cod in baking dish.
Chop tomatoes into 1/2 inch pieces.
Chop onions into 1/4 inch pieces.
Combine tomatoes and onions, cover cod.
Sprinkle with parsley, salt, and pepper.
Drizzle with olive oil.
Place in oven, bake for 20-25 minutes (or until cod becomes flakey).
