4 branzini
1 stick (4 ounces) butter
1 tablespoon lemon juice
1 tablespoon chopped capers
1 tablespoon chopped parsely
1 lemon
4 rosemary sprigs
Preheat oven to 425.
Melt the butter in a small bowl.
Mix the butter, lemon juice, capers, and parsely, and season with salt.
Lay the branzini on their sides in a baking dish.
Fill each branzino with sauce, two lemon rounds, and a rosemary sprig.
Lightly season the outside of the branzini with leftover sauce and salt.
Place in oven, bake for 10-15 minutes (or until each fish begins to flake).
Unless you are comfortable cleaning and descaling the fish, ask to have the fish prepared when purchasing it.
