1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1 cup mashed overripe bananas
1/2 cup chopped nuts (Optional)
Preheat oven to 350.
Grease and flour loaf pan.
Cream butter and sugar.
Add eggs and vanilla, beat well.
Add dry ingredients, alternating in sour cream; stir well.
Fold in bananas and nuts.
Bake 1 hour (or until center tests done).
The riper the bananas the better! It is best to wait until the bananas are browner, as the sweetness from the bananas will make the bread much more delicious.
