7 whole graham crackers OR 2 cups crushed vanilla wafers
1/4 cup butter, melted
1/4 cup sugar
11 oz cream cheese (softened)
less than 3/4 cup sugar
2 eggs
2 teaspoons vanilla extract
1 cup (8 oz) sour cream
1/4 cup sugar
1 teaspoon vanilla extract
Preheat oven to 350.
Prepare the crust. Crush graham crackers or wafers and mix with melted butter and sugar.
Press crust into the bottom and sides of an 8 inch pan and press down with fingers.
Prepare the topping. Mix sugar and softened cream cheese together until fully incorporated. Add eggs and vanilla and mix well.
Pour filling into crust and spread out.
Bake for 20 min. Let cool.
While the cheesecake bakes, prepare the topping. Mix sour cream, sugar, and vanilla.
After the cheesecake has cooled, spread the topping starting at the edges.
Bake another 10 minutes. Let cool.
Do not mix the eggs in before the sugar and cream cheese have combined or the filling will have lumps of cream cheese.
Increase the amount of crust ingredients by a graham cracker two and an extra tablespoon of butter and sugar for extra crust.
